A. Molding a solid piece of clay by hand and keeping it consistent without the heat from my hands messing up everything

Then again, if you don't want to buy anything, you could just use things from around your house. Old silverware, especially a spoon, is great for carving and finishing the surface of a sculpture.
B. Figuring what to use to make the clay nice and paintable without being glossy
You really shouldn't have to use anything. If you're using Sculpey or something similar, just fire that shit and it should be ready to paint. Then again, if you're using ceramic clay, you might want to sand the surface a bit after you fire whatever you're making. Wear a respirator, though; clay dust isn't something you want to breath.
